Roses are red
Violets are blue
Of course I must alter
This poem for you
Valentine’s Day
Comes once a year
Drinking and dining
Our theme is good cheer
Who cares if you’re single?
Fear not love is blind
We’re all human creatures
Part of the hive mind
Thus love exists truly
For one and for all
Because to be human
Means part of our kind
Alone is a myth
It’s humanity that exists
To hold and to find
No soul left behind.

The cookies are nice and light. Yum!
I am having trouble with the icing separating. Followed exact, used honey and arrowroot. Am I not mixing long enough? The recipe didn’t specify a time to mix. Thanks for the help!

Hi Carrie – sometimes if the coconut milk has too much water it can cause the icing to separate. I’d suggest adding more starch (arrowroot) to absorb the liquid or using coconut cream instead of the solid part of the coconut milk. (Both the coconut oil and coconut cream should be in their more solid, rather than liquid, state.) I’ve slightly modified the recipe above, which should help. Thanks for trying it out!
