Iced Beetroot Latte (paleo, AIP, vegan)

A swirling lake flashes red to the oceans

A tireless snake hisses credible notions

A setting green sun falls beneath a deep well

A volcano unleashes an ashy blue swell

The earth overturns and reveals a rouge belly

A fire returns and unpeels a bright melee

Of timorous embers and blazes aglow

Of colors and dashes of red light and gold

It douses itself with a splash from the sky

Of white liquid diamonds and ceases to cry

And churns back to earth dropping there with a sigh

The last dying phoenix to come down from high

And rise up again out of charcoal and fly

With fiery plumage, alight with fresh seeing

A red purple light yellow tribute to being.

Have some leftover beet juice? Make a pretty, yuppie cafe drink! Refreshing and flavorful without the caffeine. 😉

Serves: 2
Ingredients
  • 2 cups of beet juice
  • 1 cup of coconut milk
  • ½ tsp of cinnamon
  • 1 tsp lemon juice or apple cider vinegar (optional)
  • 1 tb honey or maple syrup (optional)
Instructions
  1. Mix beet juice with lemon/ACV, cinnamon, and/or sweetener, if desired.
  2. Pour into glass with ice and pour coconut milk on top. Mix as desired.

    I love this! It’s so hypnotizing! I’m hoping I have enough beets leftover after dinner because I definitely, definitely want to make this. Happy summer weekend, Julie!
