T’was the night before Christmas and all through the house,
Not a creature was stirring, except for a mouse,
Who felt very hungry and wanted a treat,
And went to the pantry where he found some meat,
“That’s not what I want!” said the mouse to himself,
Wiped the ham off his paws and went to the shelf,
Where betwixt turkey and chestnuts lay a sparkling glass,
Filled with a wonderful fragrant morass
Of sweet spicy goodness, golden and creamy,
The mice spun a twirl, all contented and dreamy,
And lifted the glass to his snout oh so gently,
And drank from the nectar, which, like a medley,
Played into his heart with the greatest of ease,
Made fast with his mind like a ‘canter of cheese,
It was eggnog, you see, that delirious drink
That makes one see stars and the moon and the Sphinx
The mouse tripped off to bed, cozy with comfort
Dreaming of Christmas and presents and Roquefort
In the morning snow came and the mouse stayed inside
Warmed by the memory of the greatest Yuletide
He had yet ever known
In this life much worth living
A gift that keeps giving and giving and giving
- 1 can coconut milk (I like this brand)
- 4 tb cooked pumpkin, butternut, or kabocha squash (any will do)
- 1 tsp vanilla
- 2-4 tb maple syrup
- 4 tb rum (non-AIP, optional)
- 1 tsp cinnamon
- 1 tsp nutmeg (sub mace for AIP)
- ¼ tsp sea salt
- Blend ingredients well, pour into glasses, finish with a sprinkle of nutmeg or cinnamon.
- Toast your loved ones, drink, & be merry!

I like your version of this poem better. Mouse adventures are always more interesting than St. Nicholas adventures. Also, this eggnog looks so creamy and perfect!! Love it!

Best nondairy eggnog I’ve ever made–and I’ve tried and disliked various ones, all disappointing! My daughter and I loved this, however. I added grassfed collagen powder and heated it up for a long commute to college on a cold recent morning, and my daughter, who can’t have dairy, was so excited! We listened to Christmas music on the radio, and the combination actually cheered us up for the long drive. Thanks for such a tasty recipe full of holiday cheer!
