Caramelized Pears with Pomegranate (paleo, AIP, vegan)

Caramelized pears (paleo, AIP, vegan) from Flash Fiction Kitchen w/ pomegranate

Burnished and sweet with a glistening sheen

Joyfully neat until heat melts the cream

Evoking treats much more rich and unclean

Lightly toasted,

Carefully roasted,

Lovingly hosted,

Never composted

Ingredients
  • 2 ripe pears (I used anjou)
  • 3 tb coconut oil or ghee/grassfed butter (non-AIP/V)
  • 3 tb maple syrup, honey, or coconut sugar
  • handful of pomegranate seeds (optional)
  • paleo/AIP crème anglaise (see here for recipe) and/or ice cream (optional)
  • fresh mint (optional)
Instructions
  1. Peel and core pears.
  2. Cook oil/fat together with sweetener over low-medium heat in a flat-bottomed pan. When mixture begins to simmer/bubble, add pears.
  3. Cook for 10-15 minutes, until pears are caramelized on bottom (watch mixture carefully to make sure it doesn't burn/stick, may need to stir every so often).
  4. Plate pears and garnish with pomegranate seeds, crème anglaise, mint, and/or ice cream/extra caramel sauce from pan. Serve warm.
