Ingredients
- 2 ripe pears (I used anjou)
- 3 tb coconut oil or ghee/grassfed butter (non-AIP/V)
- 3 tb maple syrup, honey, or coconut sugar
- handful of pomegranate seeds (optional)
- paleo/AIP crème anglaise (see here for recipe) and/or ice cream (optional)
- fresh mint (optional)
Instructions
- Peel and core pears.
- Cook oil/fat together with sweetener over low-medium heat in a flat-bottomed pan. When mixture begins to simmer/bubble, add pears.
- Cook for 10-15 minutes, until pears are caramelized on bottom (watch mixture carefully to make sure it doesn't burn/stick, may need to stir every so often).
- Plate pears and garnish with pomegranate seeds, crème anglaise, mint, and/or ice cream/extra caramel sauce from pan. Serve warm.
